Wagons of thanks to Hazel from the downtown fromagerie for introducing me to my new favourite French cheese: Beaufort. We loaded up on cheese from there last weekend and she gave us a sliver to try and there was no going back. It's a mountain cheese like Emmental which I adore (only the good stuff though please, sorry grocery store Emmental - you just suck huge), which is probably why I love it so much. It's also a giant cheese which means it comes in one of those 40kg wheels which could make stealing a wheel from Hazel slightly troublesome for me and my 5'3 bad self. Unless of course I have accomplices....
